The flavor of this chicken in incredible. It's infused with garlic and lime flavors and makes a great weeknight main dish because it's so quick and simple to make.
Chicken Marinade:
1 1/2 lb. 4 boneless, skinless chicken breasts
zest of 1 lime (zest first, then juice)
4 T. freshly squeezed lime juice from 1 - 2 limes
2 garlic cloves, minced
3 T. brown sugar
1/4 t. pepper
1 T. olive oil
2 T. finely chopped cilantro, optional
2 T. soy sauce
For Cooking:
1 - 2 T. olive oil
Pound fat ends of chicken to about 2/3 inch thickness.
Do 1 Day in Advance:
Place chicken and marinade in a ziplock bag, massage to distribute marinade evenly. Place in a bowl or on a platter; refrigerate for 24 hours.
Remove chicken from bag; discard marinade.
Cook, using one of the methods below:
Stovetop: Heat oil in a large skillet over medium-high heat. Cook for 3 minutes per side or until caramelized and golden brown.
BBQ: Brush grill with oil. Heat to medium-high (or medium if your BBQ grill is strong). Cook chicken for 3 minutes per side until caramelized.
Oven: Preheat oven to 425 degrees F. Bake 15 minutes, turn broiler/grill to High; broil for 3 minutes to caramelize surface and finish cooking.
Transfer cooked chicken to a serving platter; cover loosely with aluminum foil; let rest for 3 minutes.
Serve, garnished with more cilantro and lime wedges.
