This is an easy breakfast to prepare and can be ready in about 1 hour. It has all of your delicious breakfast favorites in one casserole dish.
2 - 9 oz. packages breakfast sausage links
1 lb. bacon (or substitute ham, chicken sausage, or turkey bacon)
32 oz. tater tots
12 large eggs, beaten
1/2 c. milk
1/4 c. green onions, thinly sliced
1/2 t. salt
1/4 t. black pepper
1 c. shredded Monterey Jack cheese
2 c. shredded Cheddar cheese, divided
2 T. green onions, thinly sliced for serving
Preheat oven to 350 degrees F. Spray a 9X13 inch baking dish with non-stick cooking spray.
Cook the sausage in a skillet until cooked through. Transfer to a paper towel-lined plate. Slice sausage into 1/2 inch pieces.
Discard grease from skillet; wipe out with paper towels. Cook bacon in the same skillet until brown and crispy. Drain on a paper towel-lined plate. Crumble.
Arrange tater tots in a single layer in the prepared baking dish.
Whisk together eggs, milk, 1/4 c. green onions, salt, and pepper. Stir in the cooked sausage and half of the cooked bacon.
Fold in the Monterey Jack cheese and 1 c. Cheddar cheese into the egg mixture; pour over tater tots.
Bake until the egg mixture is set, about 40-45 minutes.
Sprinkle the top evenly with the remaining 1 cup Cheddar cheese. place back in the oven for about 5-7 minutes until the cheese is melted.
Let sit 10 minutes before cutting.
Serve with the remaining half of the crumbled bacon and green onions sprinkled on top.
