Change up your breakfast routine and make these easy to make baked eggs. They're delicious and are nice to make on busy mornings. Pop them in the oven, set a timer, and finish getting ready for work or school while they're baking.
2 eggs
1/2 T. butter
1/8 t. kosher salt
freshly ground pepper
Optional Toppings:
shredded Parmesan cheese, Feta cheese, fresh thyme sprigs, shredded Cheddar cheese, salsa, pico de gallo, sauteed spinach, mushrooms
Preheat oven to 375 degrees F.
Add the butter to a small baking dish or a 5 inch ramekin. When preheating is done, place it in the oven until the butter melts, about 1 minute; spread butter around the inside of the dish.
Carefully crack the eggs into a small bowl; slide the 2 into the dish. Season each with kosher salt and black pepper. Place the baking dish on a baking sheet; place in the oven.
Bake 12 - 15 minutes, until whites are set and yolks reach desired firmness. The exact timing depends on the thickness of the baking dish.
If topping with cheese, add it the last minute or two of baking.
Serve, sprinkled with desired toppings.
