Enjoy a special breakfast or brunch with the puff pastry packets. They're filled with scrambled eggs, bacon and cheese and topped with more cheese and a special seasoning.
3 bacon slices
4 oz. freshly grated Cheddar cheese
6 large eggs, plus 1 egg for the egg wash
1/2 t. kosher salt
1/4 t. freshly ground black pepper
1 T. butter
1 T. all-purpose flour
1 sheet puff pastry (from a 17.3 oz. package)
optional: Everything Bagel Seasoning, grated Parmesan cheese
Preheat oven to 400 degrees F.
Line an 18x13 inch sheet pan with parchment paper or non-stick cooking spray.
Place the bacon on the sheet pan. Bake 12 minutes or until the bacon is crisp, flipping the bacon over halfway through cooking. Transfer the bacon to a paper towel lined plate to drain. Crumble the bacon into small pieces.
While the bacon is baking, grate the Cheddar cheese.
Crack 6 eggs into a medium bowl; whisk until smooth and combined, leaving no white streaks. Season with salt and pepper.
Melt the butter in a medium non-stick skillet over medium heat. Add the egg mixture and crumbled bacon; cook for a few seconds without stirring. With a spatula or spoon, make large curds by pulling them across the bottom of the skillet. Continue cooking until the eggs are almost set. There will still be a little liquid in the eggs.
Roll out the puff pastry sheet on a lightly floured surface to form a 12x12 inch square. Cut the square into 9 squares, each 4x4 inches.
Whisk 1 egg with 1 T. water until well combined to make an egg wash.
Line an 18x 13 inch sheet pan with parchment paper or spray with non-stick cooking spray.
To make the packets: place 2 T. scrambled eggs diagonally on the puff pastry square; top with 2 T. cheese. Lift one side of the puff pastry square and fold it over the scrambled eggs and cheese. Brush the puff pastry with the egg wash; fold the opposite corner of the pastry over to make a packet. Press edges to seal. Repeat with remaining packets.
Brush the packets with egg wash. Season with salt and pepper.
Optional: Sprinkle packets with Everything Bagel Seasoning and/or grated Parmesan cheese.
Place packets on the prepared pan.
Bake at 400 degrees F for 15-20 minutes or until the puff pastry is golden brown and puffed.
Serve immediately.
