This soup is easy, quick and delicious. It's a hearty meal, packed with protein, healthy and economical.
1 T. extra virgin olive oil
2 garlic cloves, minced
1 yellow onion, diced
2 carrots, peeled and diced
15 oz. can diced tomatoes
1 c. dried lentils
15 oz. can black beans, drained and rinsed
1 t. chili powder
1/2 t. cumin
1/2 t. black pepper
1/2 t. kosher salt
1/2 t. crushed red pepper flakes
4 c. vegetable broth
In a large pot, add olive oil; sauté garlic for 1 minute; add onions and carrots; sauté until onion is tender, about 5 minutes. Add remaining ingredients; stir; cover.
Bring to a boil over medium heat; reduce heat to a simmer; cook until lentils and carrots are tender, about 25 - 30 minutes.
Makes 8 one cup servings.
