Zucchini Patties

Description

These zucchini patties are delicious and so versatile. Serve them as an appetizer, a side dish or even as a main dish.

Ingredients

2 c. grated zucchini, well-drained* from about 3 medium zucchini
1 T. finely chopped or grated onion
1/4 c. Parmesan cheese
1/4 c. flour
2 large eggs
2 T. mayonnaise
1/4 t. oregano
1/4 t. salt
1-2 dashes black pepper
1-2 T. olive oil
sour cream and chopped green onion, for garnish

In a medium bowl, mix together all ingredients except for the olive oil.

In a medium to large skillet over medium heat, heat the olive oil. Drop heaping large spoonfuls of the mixture into the skillet making 5 patties; cook until browned on both sides.

Drain on a paper towel lined platter.

Serve immediately, garnished with a dollop of sour cream of chopped green onion.

Makes 5 patties.

*Place grated zucchini in a kitchen towel and wring out the excess moisture with hands.
