Everyone enjoy this tortellini soup. It's a snap to make and so delicious with crumbled sausage, 3 cheese tortellini, carrots and onion in a creamy tomato sauce.
1 lb. ground pork sausage
1 c. carrots, chopped
1 small onion, chopped
3 cloves garlic, minced
1 T. Italian seasoning
1/4 c. flour
6 c. chicken broth
6 oz. can tomato paste
1 c. heavy cream
9 oz. package 3 cheese tortellini
3 c. kale or baby spinach, chopped
salt and pepper, to taste
In a large pot over medium-high heat, add the sausage; cook and crumble until brown; transfer to a platter; set aside. Add the carrots and onion to the pot; sauté until tender. Add garlic and Italian seasoning; sauté for 1 more minute.
Stir in the flour with the vegetables and sausage; pour in chicken broth; stir. Add the tomato paste; stir. Add in heavy cream and tortellini; simmer for about 7 minutes until tortellini is cooked.
Add in the kale or spinach right before serving; allow to wilt. Season with salt and pepper, to taste.
Serve.
