This chicken is comfort food at its finest. It's an easy, flavorful main dish with chicken breasts, mushrooms and sweet Marsala cooking wine. Take advantage of the wonderfully delicious sauce and serve this with mashed potatoes, rice, spaghetti or egg noo
4 boneless, skinless chicken breasts
1/2 t. salt
1/4 t. black pepper, or to taste
2 t. minced garlic
1 c. sliced mushrooms
1 c. sweet Marsala cooking wine (or chicken broth)
1/2 c. water
1/4 c. corn starch
fresh parsley, chopped
Lightly grease a slow cooker with non-stick cooking spray.
Season chicken with salt and pepper; place in the slow cooker.
Top chicken with garlic, mushrooms, and marsala wine. Cover; cook for 5-6 hours on Low.
Transfer chicken to a platter.
Whisk water and corn starch together until dissolved; pour into the slow cooker; stir.
Add chicken back into the slow cooker; turn heat to High; cover; cook 20-30 minutes until the sauce hass thickened.
Season to taste with salt and pepper, if needed.
Transfer chicken to a platter; garnish with chopped parsley.
Serve chicken with egg noodles, spaghetti, rice or mashed potatoes and the marsala sauce ladled on top.
