One pot meals are a must for a busy family. Cooking and clean up are simple and quick. This main dish has it all, cheese, pasta, tomatoes, spinach and ground sausage of your choice.
1 lb. ground chicken, pork, or turkey sausage
8 oz. cream cheese, at room temperature, cubed
3 c. chicken broth
2 - 14.5 oz. cans Italian-style diced tomatoes, drained
20 oz. refrigerated cheese tortellini
2 c. fresh spinach, roughly chopped
In a large, deep skillet or Dutch oven over medium heat, brown the sausage (if using sausage links, remove meat from casings). Discard excess grease.
Add the softened, cubed cream cheese. Stir in 3 c. chicken broth and the tomatoes; stir until the cream cheese is melted and has been distributed throughout.
Gently stir in the tortellini; bring to a light boil; simmer with the lid partially on to allow some steam to escape. Refer to the tortellini package for instructions as to how long it takes until al-dente. It could take as little as 4 minutes.
Stir in the chopped spinach; allow it to wilt, this just takes a minute.
Remove from heat. Keep the lid partially on. Let the sauce thicken up for about 5 minutes before serving.
