Cranberry Citrus Salmon

Description

Serve family or friends this delicious salmon with a holiday twist. It's a healthy main dish that's packed with sweet, zesty and savory flavors.

Ingredients

  • 3 1/2 lb. salmon
  • salt and pepper
  • 1 blood orange, thinly sliced
  • 1 navel orange, thinly sliced
  • 3 T. pure maple syrup
  • 1 navel orange, juiced
  • 2 T. olive oil
  • 1 T. Dijon mustard
  • 1 t. chili sauce or sriracha
  • 1/2 t. garlic powder
  • 1 c. fresh cranberries
  • 5 fresh rosemary sprigs, for garnish

Steps

  1. Preheat oven to 350 degrees F.
  2. In a large, lightly greased baking dish, lay salmon, skin side down; season with salt and pepper, if desired. Arrange the citrus slices on and around salmon.
  3. In a small bowl, stir together maple syrup, orange juice, oil, Dijon mustard, chili sauce, garlic powder and cranberries; drizzle over salmon and citrus.
