Serve family or friends this delicious salmon with a holiday twist. It's a healthy main dish that's packed with sweet, zesty and savory flavors.
Ingredients
- 3 1/2 lb. salmon
- salt and pepper
- 1 blood orange, thinly sliced
- 1 navel orange, thinly sliced
- 3 T. pure maple syrup
- 1 navel orange, juiced
- 2 T. olive oil
- 1 T. Dijon mustard
- 1 t. chili sauce or sriracha
- 1/2 t. garlic powder
- 1 c. fresh cranberries
- 5 fresh rosemary sprigs, for garnish
Steps
- Preheat oven to 350 degrees F.
- In a large, lightly greased baking dish, lay salmon, skin side down; season with salt and pepper, if desired. Arrange the citrus slices on and around salmon.
- In a small bowl, stir together maple syrup, orange juice, oil, Dijon mustard, chili sauce, garlic powder and cranberries; drizzle over salmon and citrus.
