Don't like meatloaf? Think again! Everyone will love this brown sugar meatloaf and will ask you to make it again and again. Be sure to make extra sauce because it is so yummy!
2 lb. ground beef
1 c. quick-cooking oats, uncooked
1/2 c. green onions, chopped
1/3 c. green pepper, chopped
1/2 c. chopped celery
1 T. Worcestershire sauce
1/2 t. liquid smoke, optional
several drops hot sauce
2 t. minced garlic
1 t. salt or to taste
1/2 t. black pepper
1 T. Dijon mustard
8 oz. can tomato sauce, divided (use only half for the loaf)
1 egg
1 T. brown sugar
Sauce: *
1/2 c. (4 oz.) remaining tomato sauce
1/4 c. brown sugar
1/4 c. honey
2 T. Dijon mustard
Preheat oven to 350 degrees F.
Meatloaf:
Mix all of the meatloaf ingredients together in a large bowl. Shape mixture into a loaf; place in baking dish.
Bake uncovered for 30 minutes.
Sauce:
Whisk sauce ingredients together in a bowl.
After 30 minutes, remove meatloaf from the oven and pour the sauce over the top, reserving a little for serving.
Raise oven temperature to 375 degrees F. Return meatloaf to the oven. Bake for 35 minutes.
Remove from the oven. Slice. Serve with any left over sauce from the baking dish.
4-6 servings.
* The sauce is so yummy, you might want to consider doubling it.
