Description
Transform those blah tasting chicken breasts into something magical. They are stuffed with melt-in-your mouth Cheddar cheese, broccoli and corn to deliver little flavor explosions in every single bite.
Ingredients
2 lb. boneless, skinless chicken breasts
1/2 t. kosher salt
1/4 t. freshly ground black pepper
2 c. fresh broccoli florets, cut into 1/2 inch pieces
1/2 c. frozen corn
2 T. water
1-2 c. shredded Cheddar cheese
2 c. BBQ sauce

Preheat oven to 425 degrees F.
Place the breasts on a cutting board; carefully slice into the thickest part of one side of each breast, creating a slit that's about 4 inches across, without slicing through the entire breast. Pat each breast dry with paper towels. Season with salt and pepper.
Place the broccoli and corn in a medium sized microwave safe bowl with 2 T. water. Microwave for about 3 minutes until the broccoli is slightly tender but still bright green, or steam the broccoli and corn until softened. Add the cheese to the bowl.
Use a spoon to fill each chicken breast with the chees and vegetable mixture; secure each one closed with a wooden toothpick. Place the stuffed breasts in a 9 × 13 inch baking dish; pour the BBQ sauce over them.
Bake 15 - 25 minutes, until the chicken reaches 165 degrees F. Remove from the oven; let rest for 5 minutes. Discard the toothpicks.
Serve sliced or whole with additional BBQ sauce, if desired.
