This classic chili is ready in a little over an hour. It's mild, so if you want it spicy, add some red pepper flakes, cumin and/or cayenne pepper.
2 T. bacon drippings or oil
1/2 c. chopped yellow onion
1 clove garlic, minced, optional
1 lb. lean ground beef
14 oz. can diced or crushed tomatoes or tomato juice
2-3 15 oz. cans mild chili beans with the juices
2 t. chili powder
3/4 t. salt
1/8-1/4 t. black pepper
16 oz. beef chili roll/brick
Saute the onion in the becon drippings or oil; add the ground beef and garlic; cook until no pink remains. Discard excess grease.
Add canned tomatoes or tomato juice, chili beans, chili powder, salt, pepper and a chili roll/brick; stir.
Simmer 1 hour.
Serve, topped with shredded Cheddar cheese, if desired.
