You can make a store bought version of these, but why would you since they are so easy to make? They are a satisfying and delicious breakfast, but great for any meal.
12 breakfast sausage links, cooked
1 1/2 c. all-purpose flour
2 T. granulated sugar
4 t. baking powder
1/2 t. fine sea salt
1 1/3 c. buttermilk
1 large egg, beaten
4 T. unsalted butter, melted
1 t. vanilla extract
cooking spray
Cook sausage according to package directions; set aside, covered to keep warm.
In a large bowl, whisk together the flour, sugar, baking powder, and salt.
In a small bowl, whisk together the buttermilk, beaten egg, melted butter, and vanilla.
Pour the wet mixture into the dry mixture; stir until combined. Let sit 5 minutes.
Place a large non-stick skillet over medium heat. Once hot, spray lightly with cooking spray.
Place 3 T. batter into the hot skillet; gently spread the batter out. Cook 2-3 minutes until bubbles appear on top and the bottom is golden brown; flip; cook 2-3 minutes until golden brown.
Place the pancake on a platter and immediately place a cooked sausage link in the center. Roll the pancake around the sausage link. Place on a plate, seam side down, to keep it in place.
Repeat with the remaining batter and sausage links.
Serve with syrup poured on top, or dip in a small bowl of syrup.
