Black Truffle Spinach Mushroom Tortellini

If you want a pasta dinner that is so good, you can serve it to company and blow their socks off, this one is it! It's simple to make with just a few ingredients and can be ready in less than 30 minutes.

Ingredients

20 oz. package cheese tortellini
4 T. fresh churned black truffle butter (store bought)
1 shallot, diced
10 oz. sliced mushrooms
salt and pepper
5 oz. baby spinach
1 c. heavy cream
1 c. shredded Parmesan cheese
red pepper flakes, for garnish, optional

Cook tortellini according to package directions; drain; set aside.

Meanwhile, melt black truffle butter in a large skillet; add the shallot and mushrooms; cook 5 minutes. Season with salt and pepper.

Add spinach; cook just until wilted. Stir in heavy cream and Parmesan cheese; add cooked tortellini. Stir to combine.

Serve, garnished with more cheese and red pepper flakes, if desired.
