This oven baked chicken is so easy to make and delicious as well. It's a 30 minute chicken dish that everyone will love, so be sure to make enough for seconds.
3-4 large chicken breasts (or 5-6 thinly sliced chicken breasts)
2 T. olive oil
3/4 t. dried basil
3/4 t. dried oregano
1/4 t. garlic powder
1 t. salt
1/2 t. pepper
1 1/2 c. fresh tomatoes, like Campari, cherry or grape tomatoes, halved or quartered
1/3 c. red onion, diced
3 T. balsamic vinegar
2 T. brown sugar
1 1/2 c. grated Mozzarella cheese or 4 - 8 slices of fresh Mozzarella
freshly chopped Italian parsley or fresh basil, optional garnish
Preheat oven to 425 degrees F.
Place chicken breasts in a casserole dish or 12 inch cast-iron skillet. Sprinkle on olive oil, basil, oregano, garlic powder, salt, and pepper.
Place halved/quartered tomatoes and diced onion all around chicken. Sprinkle on balsamic vinegar and brown sugar.
Bake 18-24 minutes, depending on the thickness of the chicken breasts. After chicken is cooked through, sprinkle on Mozzarella cheese.
Set oven to broil. Place casserole dish or skillet on the top rack. Broil for about 5 minutes, or until cheese has melted.
Serve, drizzled with the balsamic sauce and the tomatoes and garnished with the parsley or basil.
