Show your family or guests some love with these flavorful, delicious chicken breasts. They are stuffed with shallots, garlic, spinach, seasonings, cream cheese and Parmesan cheese.
4 boneless, skinless chicken breasts
3 T. olive oil, divided
2 shallots, finely chopped
2 cloves garlic, minced
3 heaping c. spinach, chopped
1 t. salt
1 t. black pepper
1 t. oregano
1 t. thyme
1/2 t. crushed red pepper flakes
4 oz. cream cheese, softened
1 c. freshly grated Parmesan cheese
Preheat oven to 375 degrees F.
Dry chicken with paper towels. Cut a horizontal pocket into each bre4ast, but not all the way through; open each like a book. Set aside.
In a medium skillet over medium high heat, heat 1 T. oil; saute shallots for about 3 minutes. Add garlic and chopped spinach; cook until spinach has wilted; remove from heat.
In a small bowl, mix salt, pepper, oregano, thyme, and crushed red pepper flakes. Divide this mixture in half.
In a medium bowl, add softened cream cheese, Parmesan cheese, wilted spinach, shallots and half of the spice mix; mix well.
Rub the remaining 2 T. oil onto each breast; season each with the remaining spice mix.
Stuff each breast, divided evenly with the spinach and cream cheese mixture. Place the stuffed chicken breasts in a 9X13 inch baking/casserole dish.
Bake uncovered for 30-45 minutes, or until chicken is cooked through and there's a brown crust on the tops. Remove the chicken from the oven.
Serve immediately.
