Million Dollar Spaghetti Casserole

Description

Is it spaghetti or is it lasagna? Well, it's a delicious combination of both. It's a fantastic dish to serve to a crowd, or to your family on a regular rotation schedule.

Ingredients

16 oz. dry spaghetti
2 T. olive oil
1 c. yellow onion, from a medium yellow onion, chopped
4 cloves garlic, minced
1 1/2 lb. sweet Italian sausage, casings removed (or favorite sausage)
6 c. homemade marinara sauce, divided or 48 oz. jarred marinara sauce
8 oz. cottage or ricotta cheese
8 oz. cream cheese
1/4 c. sour cream
3 t. dried Italian seasoning
3 c. shredded mozzarella cheese, divided
salt and black pepper
1/2 c. butter, cut into slices, divided
chopped parsley, for garnish

Preheat oven to 350 degrees F.

Bring a large pot of water, with 1 T. salt, to a boil. Cook pasta according to package directions; drain; return pasta to the pot; add 3 c. marinara sauce; stir; set aside.

In a large skillet, heat 2 T. olive oil over medium heat until it shimmers; add onion and garlic; cook until they begin to soften, about 5 minutes. Add sausage; brown, crumbling sausage while cooking. Cook until no pink remains. Drain well. Add the remaining marinara sauce to the skillet; set aside.

In a medium bowl, combine cottage or ricotta cheese, cream cheese, sour cream, 1 c. mozzarella cheese, and Italian seasoning; set aside.

Place half of the sliced butter in a deep 9x13 inch baking dish.* Spread half of the spaghetti in the dish; spread the cheese mixture evenly over the spaghetti; top with remaining butter. Spread remaining spaghetti over the butter and cheese mixture. Pour tomato meat sauce evenly over the layer. Top with remaining mozzarella cheese.

Bake until the casserole is heated through, about 35-45 minutes.

Serve, garnished with chopped parsley.

*If you don't have a deep 9x13 inch baking dish, use a second smaller baking dish.
