Change up taco night with this taco casserole. It's flavorful, cruncy and savory because it's made with ground beef, enchilada sauce, beans, salsa and Fritos.
1 - 1 1/2 lb. ground beef
2 T. dried minced onion
2 T. taco seasoning
10 oz. can enchilada sauce
15.1 oz. can taco fiesta beans, rinsed and drained
16 oz. salsa
9.25 oz. Fritos Corn Chips, divided
8 oz. shredded Monterey Jack and Cheddar cheese blend
Choice of optional toppings: tomatoes, shredded lettuce, chopped green onion, cilantro, sour cream, pico de gallo, jalapeños, olives, guacamole, sliced avocado
Preheat oven to 350 degrees F.
In a large skillet on medium-high heat, cook and crumble ground beef until no longer pink. Discard excess grease.
Add the dried minced onion and taco seasoning. Stir in enchilada sauce, beans and salsa. Bring to a boil; reduce the heat to a simmer; simmer for 5 minutes.
In a 13x9 inch baking/casserole dish, add a layer of half of the Fritos; add half of the cheese blend. Carefully spoon the meat mixture on top, not disturbing the Fritos and cheese layers. Sprinkle the remaining cheese evenly on top.
Bake uncovered for 20 minutes. Add the remaining Fritos to the top. Bake another 10 minutes.
Serve with your favorite toppings.
