Description
Change up taco night with this taco casserole. It's flavorful, cruncy and savory because it's made with ground beef, enchilada sauce, beans, salsa and Fritos.
Ingredients
- 1 - 1 1/2 lb. ground beef
- 2 T. dried minced onion
- 2 T. taco seasoning
- 10 oz. can enchilada sauce
- 15.1 oz. can taco fiesta beans, rinsed and drained
- 16 oz. salsa
- 9.25 oz. Fritos Corn Chips, divided
- 8 oz. shredded Monterey Jack and Cheddar cheese blend
- Choice of optional toppings: tomatoes, shredded lettuce, chopped green onion, cilantro, sour cream, pico de gallo, jalapeños, olives, guacamole, sliced avocado
Steps
- Preheat oven to 350 degrees F.
- In a large skillet on medium-high heat, cook and crumble ground beef until no longer pink. Discard excess grease.
- Add the dried minced onion and taco seasoning. Stir in enchilada sauce, beans and salsa. Bring to a boil; reduce the heat to a simmer; simmer for 5 minutes.
