This layered casserole is prepared with layers of mac and cheese, ground beef, veggies, tomatoes and cheese. It's satisfying and delicious.
1 box macaroni and cheese, prepared according to package instructions (milk needed)
1 lb. ground beef (or ground turkey)
1 T. olive oil
1 c. canned diced tomatoes with its juices, or tomato soup
1/2 c. frozen vegetables, your favorite
1/2 c. beef broth
1/2 c. shredded Cheddar cheese
1/3 t. each salt and black pepper
1/3 t. coriander
Prepare mac and cheese as instructed on the box. It should be done once you are set to layer. (2 cups prepared mac and cheese is needed.)
Preheat the oven to 360 degrees F.
Add olive oil to a skillet. Cook the ground beef in the skillet until browned, stirring occasionally. Discard excess grease. Add the tomatoes and its juices; stir; cover; cook 5 minutes.
Add frozen vegetables and broth to the skillet with the seasonings; stir; cook 5 minutes. Place2 cups macaroni and cheese in the bottom layer of an 8x8 inch or larger casserole dish.
Add the meat with the vegetables on top, spreading it out evenly.
Bake 20 minutes. Sprinkle on the Cheddar cheese. Bake another 10 minutes.
Remove from the oven; let sit for 15 minutes to thicken before serving.
6-8 servings.
