Description
This layered casserole is prepared with layers of mac and cheese, ground beef, veggies, tomatoes and cheese. It's satisfying and delicious.
Ingredients
- 1 box macaroni and cheese, prepared according to package instructions (milk needed)
- 1 lb. ground beef (or ground turkey)
- 1 T. olive oil
- 1 c. canned diced tomatoes with its juices, or tomato soup
- 1/2 c. frozen vegetables, your favorite
- 1/2 c. beef broth
- 1/2 c. shredded Cheddar cheese
- 1/3 t. each salt and black pepper
- 1/3 t. coriander
Steps
- Prepare mac and cheese as instructed on the box. It should be done once you are set to layer. (2 cups prepared mac and cheese is needed.)
- Preheat the oven to 360 degrees F.
- Add olive oil to a skillet. Cook the ground beef in the skillet until browned, stirring occasionally. Discard excess grease. Add the tomatoes and its juices; stir; cover; cook 5 minutes.
