This is a great twist on a classic sandwich. It's a cross between a Hawaiian pizza and a yummy grilled cheese.
4 slices white or sourdough bread
butter, at room temperature
1/4 c. pizza sauce, or to taste
4 slices Canadian bacon
4 slices pineapple rings, patted dry
4 slices Cheddar cheese
Preheat a griddle or skillet over medium heat.
Butter one side of each slice of bread; place one with the buttered side down on the griddle. Carefully spread 2 T. pizza sauce over the bread. Top with 2 Canadian bacon slices, 2 pineapple rings and 2 cheese slices. Place a bread slice on the top, buttered side up. Repeat with the remaining bread, pizza sauce, Canadian bacon, pineapple and cheese.
Cook each sandwich for 3 to 4 minutes or until the bottom slices of bread are toasted, then carefully flip the sandwiches over; cook another 3 to 4 minutes or until the second sides are toasted. Remove sandwiches to cutting board.
When sandwiches have cooled slightly, cut each in half, if desired.
Serve immediately.
