Make a quick and delicious meal using cooked shredded chicken and Caesar salad served on garlic toast.
Toasted Garlic Bread:
1 French bread loaf
1/3 c. spreadable butter
1/2 t. garlic salt
1/2 t. Italian seasoning
Chicken Caesar Salad:
2 hearts of romaine
2 c. cooked shredded or cubed chicken (rotisserie chicken is great for this)
1/3 c. creamy Caesar dressing
1/4 c. shaved Parmesan cheese
Preheat the oven to 350 degrees F.
Cut the bread in half horizontally. Spread and coat half of the spreadable butter on each side of the loaf. Sprinkle the garlic salt and Italian seasoning evenly over the butter.
Bake 8-10 minutes until the butter hass melted.
Broil for 1 minute to get the edges golden brown and crispy.
For the salad, cut the bottom 1-2 inches off of the romaine lettuce hearts to remove the core. Chop the lettuce into small bite sized pieces; place in a large bowl.
Toss the lettuce in a bowl with the Caesar salad dressing until evenly coated. Stir in the chicken and Parmesan cheese.
Place the salad mixture evenly down the length of the bottom piece of garlic bread. Place the bread top on; cut into 4-6 sandwiches for lunch or dinner, or 8-12 sandwiches for an appetizer or finger food.
Serve immediately.
