Description

Camping season is the perfect time to make these grilled nachos. You can prepare many of the ingredients in advance to save time, using your favorite ingredients.

Ingredients

thick, sturdy restaurant-style tortilla chips
ground beef or protein of choice
taco seasoning
black beans or refried beans
shredded Cheddar, Monterey Jack, Pepper Jack, or Mexican cheese
fresh tomatoes, diced
onion, sliced or diced
guacamole or avocado, peeled and sliced
sour cream
green chilies or bell peppers, chopped

Cook the taco meat with the taco seasoning using your favorite cooking method.

Chop and prepare the toppings.

Assembly:
Place a layer of tortilla chips in the bottom of a large, disposable aluminum foil pan or cast-iron skillet. Add a layer of desired toppings, including cheese. Layer chips and toppings until the pan is filled. Add a thick layer of cheese on the top.

Cover the pan with heavy-duty aluminum foil; crimp closed around the edges.

Place pan on a grate over a campfire or on a grill. DON'T place the pan directly over an open flame or the bottom could burn.

Cook until the cheese has melted and the toppings are cooked and tender, 15 to 30 minutes, depending on the temperature of the fire/grill.

Peel back the corner of the aluminum foil to check to see if the nachos are grilled to your liking.

Remove the pan from the campfire.

Serve with more toppings of choice.
