Everyone loves a dish that is super simple to prepare that will give you rave reviews. This chicken has a sweet and tangy flavor, is delicious and fork tender. Serve it with your favorite cooked rice.
2 1/2 lb. skinless, boneless chicken breasts or thighs
1 c. apricot preserves
1 c. French dressing
1 oz. envelope Lipton's dry onion soup mix
Preheat oven to 350 degrees F. Spray/grease a 9x13 inch baking dish.
Trim off and discard any fat from the chicken. Pound out chicken with the edge of a small plate or meat mallet, if desired but not necessary. Cut chicken into serving size pieces; pat dry with paper towels.
Place in the prepared baking dish.
Mix the apricot preserves, French dressing, and onion soup mix in a medium bowl; spread evenly over the chicken.
Bake uncovered for about 50 to 60 minutes.
Serve with rice, if desired.
