This easy to make pasta makes an incredible side dish, but could also be served as a main dish as well. It has a nutty brown butter and garlic flavor that you'll want to serve over and over again.
1 lb. angel hair pasta
1/2 c. unsalted butter
2 garlic cloves, peeled and halved
1/2 c. freshly grated Parmesan cheese
minced parsley, chives or tarragon, for garnish
Cook pasta in well salted water according to package directions, about 3-5 minutes.
While the pasta is cooking, melt the butter in a small saucepan over medium heat; add garlic cloves; cook over medium heat until butter foams, giving the pan an occasional swirl.* Once butter foams, keep a close eye on it. The color will change from yellow to tan and then to brown. When it turns brown, immediately remove it from the heat. Discard the garlic cloves. Pour it over the cooked pasta.
Stir in Parmesan cheese until melted.
Serve hot, garnished with minced parsley, chives or tarragon.
6 servings.
*For a little heat, add in a little red pepper flakes.
