This is a delicious, satisfying and easy meal to prepare and a wonderful way to use leftover chicken and ham. It will be a big hit that you'll want to add to your meal rotation.
8 oz. penne pasta
2 T. unsalted butter
2 T. all-purpose flour
2 c. milk or heavy cream
2 c. shredded Swiss cheese
1 c. shredded Mozzarella cheese or Italian blend
1 t. Dijon mustard
1/2 t. salt
1/4 t. garlic powder
1/8 t. black pepper
1 c. chopped ham
2 c. chopped precooked chicken
Topping:
1/2 c. bread crumbs
2 T. unsalted butter, melted
Preheat oven to 350 degrees F.
Cook penne pasta according to package directions, about 9-11 minutes. Drain.
While the pasta is cooking, melt 2 T. butter in a large saucepan over medium heat. Stir in flour; when combined, slowly whisk in milk or cream. Cook and stir over medium heat until slightly thickened and bubbly. Add the cheeses, mustard, salt, garlic, and pepper until cheeses are melted. Stir in ham and chicken.
Add pasta to the cheese sauce; stir. Pour into an ungreased 2 quart casserole dish. Sprinkle with bread crumbs. Lightly drizzle melted butter over the bread crumbs.
Bake for about 25 - 35 minutes or until bubbly and bread crumbs are golden brown. Cool slightly before serving.
