This is an easy and delicious soup for busy families. It’s quick to make and takes little effort. It will be a hit, so you'll want to add it to your meal rotation.
1 lb. ground beef
1 packet onion soup mix
1 3/4 c. mixed frozen vegetables (or fresh store-bought cut veggies for soup or leftover vegetables)
5 c. water
28 oz. can diced tomatoes with juices
1 c. elbow macaroni, uncooked
In a large soup pot or Dutch oven, brown ground beef. Discard excess fat.
Pour in the water, onion soup mix and tomatoes with juices; simmer 1 hour over medium-low heat.
Add elbow macaroni and vegetables; cook 15 minutes on medium heat.
Serve hot.
