This is a quick and easy weeknight meal. It's a casserole with just a few ingredients that get dumped in the slow cooker. Everyone will clean their plates, it's so good.
4 - 6 skinless, boneless chicken breasts
cooking spray
2 (10.5-oz.) cans unsalted cream of chicken soup (for less sodium)
1 pkg. Lipton Savory Herb with Garlic Soup and Dip Mix (Good Seasonings Italian Dressing Mix could be substituted)
1 3/4 c. milk
1 c. regular long-grain rice, rinsed and uncooked
salt and pepper, to taste
1/4 c. grated Parmesan cheese
Spray a 6 qt. slow cooker with cooking spray.
Place chicken in the prepared slow cooker.
Mix together the cream of chicken soup, soup and dip mix, milk, and rice; season with salt and pepper; pour over the chicken. Sprinkle the Parmesan cheese on top of rice mixture.
Cover; cook on HIGH for 3 - 4 hours.
Remove chicken from slow cooker; chop or shred into pieces; add chicken back into the slow cooker; stir. (If the rice seems too thick, add chicken broth, water or a little milk to thin it out.)
Serve.
6 servings.
* DON'T cook rice in advance.
** To avoid sticky rice, rinse the rice before adding it to the slow cooker to remove excess starch that causes the rice to plump and stick together.
