Just about everything is better with Everything Bagel Seasoning, including chicken cutlets. Serve these delicious breaded cutlets with a side of mixed greens topped with an easy to make lemon dressing.
Chicken:
4 chicken cutlets
Kosher salt and freshly ground black pepper
1/2 c. all-purpose flour
1/4 c. milk
2 large eggs, beaten
1 1/4 c. panko bread crumbs
3 T. Everything Bagel Seasoning
3 T. salted butter
3 T. olive oil
Easy Lemon Dressing:
1/2 c. olive oil
1 T. Dijon mustard
2 t. honey
2 lemons, juiced (about 1/4 c.)
Kosher salt and freshly ground black pepper
Salad:
4 c. mixed greens
1 c. halved cherry tomatoes
2 lemons, halved or sliced, for garnish
Chicken:
Season cutlets with 1/2 t. salt and 1/4 t. pepper.
Add the flour to a shallow bowl. Whisk together the eggs and milk in a second bowl, making an egg wash. Stir together the panko and Everything Bagel Seasoning in a third bowl.
Dredge each cutlet first in the flour, shaking off the excess; dip into the egg wash; coat in the seasoned panko.
Heat a large skillet over medium heat; add the butter and oil. When the butter has melted, add the chicken; cook until golden and crisp (or registering 165 degrees F), 4 - 5 minutes per side. Remove to a rack to rest.
Lemon Dressing:
While the chicken is cooking, add the olive oil, mustard, honey, lemon juice, salt and pepper to taste to a jar with a lid; shake to combine.
Salad:
Add the mixed greens to a bowl; pour the lemon dressing over greens; toss.
Add the mixed greens to a large platter; place the chicken on top.
Serve, garnished with the tomatoes and lemons.
