Switch up Taco Tuesdays by making these taco inspired baked potatoes. They are a breeze to make, delicious and very satisfying and filling.
Ingredients
- 4 - 6 medium Russet potatoes
- 1 lb. lean ground beef
- 1 oz. packet taco seasoning
- water called for on seasoning packet
- Topping choices: shredded lettuce, chopped tomatoes, shredded Cheddar cheese, sour cream, salsa, guacamole, chopped green onions
Steps
- Preheat oven to 400 degrees F.
- Scrub potatoes; pat dry. Poke a few holes in each potato; wrap each in aluminum foil.
- Bake for 1 hour. Carefully remove hot potatoes from oven; set aside to cool slightly.
