This is an easy, flavorful dinner to make on busy weeknights. It's made with a few simple, economical ingredients, and can be on the table in a little over an hour.
1 lb. ground beef
2 c. long-grain white rice, uncooked
2 - 10.5 oz. cans French onion soup
2 - 10.5 oz. beef consomme
1/2 c. (1 stick) unsalted butter, sliced into pats
chopped chives or parsley, for garnish
Preheat oven to 425 degrees F. Spray a 9×13 inch baking dish with non-stick cooking spray; set aside.
In a medium skillet over medium heat, add ground beef; cook until no longer pink, 8-10 minutes. Discard excess grease.
Add the ground beef to the prepared baking dish; top with uncooked rice, French onion soup, and beef consomme; stir.
Top with the butter. Cover with aluminum foil.
Bake for 30 minutes. After 30 minutes, remove the foil; bake, uncovered, for 30 more minutes, or until the rice is cooked through and tender. Fluff the rice with a fork.
Serve garnished with chives or parsley.
