In a hurry to make dinner? Make this delicious chicken and dinner can be ready in a jiffy.
2 t. garlic powder
1 1/2 t. onion powder
2 t. paprika or smoked paprika
2 t. dried oregano
1 1/2 t. black pepper
1 t. salt
3 lb. boneless, skinless chicken thighs
1 T. olive oil
2 T. freshly chopped cilantro, optional
Combine the garlic, onion, paprika, oregano, salt and pepper in a small bowl. Sprinkle half of these spices over one side of the chicken; turn chicken pieces over; sprinkle the remaining spices over them; rub the spices into the chicken, coating well.
Grill Pan:
Heat a non-stick grill pan over medium heat; drizzle with the olive oil.
Place half of the chicken in the grill pan, making sure there is a gap between the pieces. Cook the chicken without touching it for 5 minutes; flip the pieces over; cook for 3 - 5 minutes until cooked through. Repeat with remaining chicken.
Broiler:
Preheat oven to broil.
Place an oven rack 6 inches from the top of the oven.
Place a wire rack over a large baking tray; arrange chicken on the wire rack. Broil the chicken for 6 minutes. Remove the chicken from the oven; turn chicken pieces over; broil 5 - 6 minutes.
Allow chicken to rest for 5 minutes.
Serve, sprinkled with cilantro, if desired.
10 servings.
*This could also be made with chicken breasts. Watch the cooking time closely and adjust time as needed. Chicken breasts cook faster than thighs, depending on the thickness.
