Breakfast Pizza? Yes, it's the ultimate comfort food to start your day. It's made with your favorite English muffins, ground breakfast sausage, cheese and gravy. Yum!
1 package English muffins, each muffin sliced in half
8 eggs
1 lb. breakfast sausage
8 oz. thinly sliced mild Cheddar cheese
Sawmill Gravy:
2 c. milk
1/4 c. sausage drippings, add butter if there aren't enough drippings
1/4 c. flour
1/2 t. salt, or to taste
1/4 t. black pepper, or to taste
Cook sausage in a skillet until well done; remove from skillet; discard all but 1/4 c. fat. Set sausage aside in a bowl.
Add the flour to the meat drippings in the skillet. Cook and stir over medium heat 5 - 10 minutes or until mixture starts to turn golden, burning away the raw flour flavor which must be done before liquid is added.
Slowly add milk, stirring constantly; season with salt and pepper, as needed; cook gravy until it boils and thickens.
Lightly toast the English Muffins while making the gravy.
Scramble the eggs in a non-stick skillet, adding a small dash of milk to make them fluffier, if desired. Season with salt and pepper.
Turn the oven broiler on High. Assemble English muffin halves on a baking sheet.
Add gravy to the open faced toasted muffins; top with scrambled eggs, a cheese slice and sausage.
Toast under the broiler until the cheese is bubbly and melted.
Serve.
