If you like both pizza and monte cristo sandwiches, then you'll love this Monte Cristo pizza! The pizza crust is topped with diced ham, two different cheeses, chicken tenders and is served with a delicious raspberry sauce and a bit of powdered sugar.

Ingredients

1 recipe prepared pizza dough
1/2 T. + 1/2 t. extra virgin olive oil, divided
1 c. sliced white button mushrooms
1 c. cubed ham
1 c. fried chicken fingers, like those available at grocery store deli sections, sliced into 1/2 inch slices
1 c. shredded Swiss cheese
1 c. shredded Mozzarella cheese
1/4 c. panko bread crumbs
1/4 c. raspberry seedless preserves
2 T. water
powdered sugar, for dusting

Preheat the oven to 450 degrees F with the pizza stone in the oven, heating as well. Heat an additional 10-15 minutes to ensure the stone is thoroughly heated.

In a small bowl, combine the panko breadcrumbs and the 1/2 t. olive oil.

Make your pizza dough according to your recipe. Roll out the dough; transferit onto the preheated pizza stone. Brush with the remaining olive oil.

Layer on the toppings: mushrooms, ham, chicken, both cheeses, and olive oil/panko bread crumbs.

Bake for 10-15 minutes until crust is golden.

While the pizza is baking, make the raspberry sauce.

In a small saucepan, heat the preserves to melt, adding a little water to thin it out.

When the pizza is done, remove it from the oven.

Serve the pizza dusted with powdered sugar and drizzled with the raspberry sauce.
