Make a delicious, easy breakfast or brunch casserole in a little over an hour. It starts with frozen O'Brien potatoes with eggs, whipping cream or milk, shredded cheese and seasonings.
5 c. frozen O'Brien Hashbrown Potatoes
5 eggs
⅔ c. heavy whipping cream or regular milk
1 c. shredded Cheddar or Colby-Jack cheese
2 t. salt
1 t. black pepper
Preheat oven to 400 degrees F. Grease an 8x8 or 9x9 inch baking dish.
Add potatoes and cheese to a large bowl; set aside.
Pour heavy cream in a small bowl; whisk in eggs; pour over potatoes and cheese; mix well. Pour mixture into the prepared baking dish.
Bake for 1 hour until eggs are firm.
Remove from oven. Let set for 10 minutes.
Serve.
