Don't buy prime rib when you can make a roast that's just as flavorful and delicious but more economical. It turns a regular roast into a special, elevated main dish perfect for any occasion.
3 lb. beef eye of round roast
1 t. garlic powder
1 t. onion powder
salt and pepper, to taste
Season the roast with salt, pepper, garlic powder, and onion powder. Place the roast uncovered in a roasting pan or baking dish.
Place the roast in the preheated oven; reduce the temperature to 475 degrees F. Roast the meat for 21 minutes (7 minutes per pound). Turn the oven off; DO NOT OPEN THE OVEN DOOR, NOT EVEN A LITTLE; let the roast sit in the hot oven for 2 1/2 hours.
Remove the roast from the oven. The internal temperature should have reached at least 145 degrees F.
Transfer the roast to a cutting board; use a sharp knife to carve it into thin slices.
Serve.
