This salad is much like Applebees Chicken Salad. It's an entree that's easy to make, healthy and delicious.
Salad:
2 boneless, skinless chicken breasts
6 c. shredded green cabbage from about 1 small head
2 c. shredded red cabbage from about 1/2 small head
1 large carrot, shredded
1 red bell pepper, thinly sliced
1/4 c. chopped fresh cilantro
1/4 c. chopped green onions
1/4 c. sliced almonds, toasted
1/4 c. crispy chow mein noodles
Dressing:
1/4 c. soy sauce
2 T. rice vinegar
1 T. sesame oil
1 T. honey
1 t. grated fresh ginger
1 clove garlic, minced
1 T. sesame seeds, for optional garnish
Preheat the grill or grill pan over medium-high heat.
Season the chicken breasts with salt and pepper.
Grill the chicken for about 6-7 minutes per side, or until cooked through. Remove from heat; let rest for a few minutes before slicing thinly.
In a large bowl, combine the green cabbage, red cabbage, carrot, red bell pepper, fresh cilantro, green onions, almonds, and chow mein noodles.
Dressing:
In a small bowl, whisk together the soy sauce, rice vinegar, sesame oil, honey, ginger, and garlic to make the dressing.
Pour the dressing over the salad in the bowl; toss until the salad is well coated in the dressing.
Top the salad with the sliced grilled chicken.
If desired, garnish with sesame seeds for an extra crunch and flavor.
Serve immediately.
