Description
This salad is much like Applebees Chicken Salad. It's an entree that's easy to make, healthy and delicious.
Ingredients
- Salad:
- 2 boneless, skinless chicken breasts
- 6 c. shredded green cabbage from about 1 small head
- 2 c. shredded red cabbage from about 1/2 small head
- 1 large carrot, shredded
- 1 red bell pepper, thinly sliced
- 1/4 c. chopped fresh cilantro
- 1/4 c. chopped green onions
- 1/4 c. sliced almonds, toasted
- 1/4 c. crispy chow mein noodles
- Dressing:
- 1/4 c. soy sauce
- 2 T. rice vinegar
- 1 T. sesame oil
- 1 T. honey
- 1 t. grated fresh ginger
- 1 clove garlic, minced
- 1 T. sesame seeds, for optional garnish
Steps
- Preheat the grill or grill pan over medium-high heat.
- Season the chicken breasts with salt and pepper.
- Grill the chicken for about 6-7 minutes per side, or until cooked through. Remove from heat; let rest for a few minutes before slicing thinly.
