Thai Chicken Salad with Peanut Dressing

Description
Serve this salad as a delicious, light, main dish or as a side dish. It can be ready to enjoy in about 20 minutes.
Ingredients
Dressing:
5 T. creamy peanut butter, not natural
3 T. water, or more as needed
2 T. soy sauce
1 t. lime juice
1 T. honey
1/2 t. pure toasted sesame oil (from the Asian section)
1 t. freshly grated ginger (frozen is easier to grate)
1/4 t. garlic powder
Salad:
1 lb. coleslaw mix, from a bag
3 c. shredded cooked chicken, (rotisserie chicken is great)
1/4 c. scallions, chopped
1 red bell pepper, chopped
1/2 c. chopped peanuts
small handful fresh cilantro, chopped
small handful fresh basil, thinly sliced or torn
salt and pepper, to taste

Dressing:
Add the dressing ingredients to a medium-sized bowl; whisk until smooth; taste and adjust, adding more lime juice or honey, if desired. If the dressing is really thick since peanut butter brands can vary, add more water.
Salad:
Prepare and add the salad ingredients to a large bowl; toss with the dressing.
Serve immediately, seasoned with salt and pepper if desired.
4-6 servings.
