Garlic Chicken Fried Rice

Description

Cooked, chilled white rice, chicken breasts, mixed veggies, eggs, and garlic make a wonderful dish that can be on your table in about 30 minutes.

Ingredients

  • 2 c. cooked white rice, chilled
  • 2 chicken breasts, diced
  • 2 cloves garlic, minced
  • 1 c. mixed vegetables (like peas, carrots, and corn)
  • 2 eggs, beaten
  • 2 T. soy sauce
  • 1 T. sesame oil
  • salt and pepper, to taste
  • green onions, for garnish

Steps

  1. In a large skillet or wok, heat some oil over medium-high heat. Add diced chicken and garlic; cook until chicken is cooked through and garlic is fragrant.
  2. Push the chicken to one side of the skillet. Add the beaten eggs to the other side; scramble the eggs until fully cooked.
  3. Add mixed vegetables to the skillet; cook until tender.
