Description
Cooked, chilled white rice, chicken breasts, mixed veggies, eggs, and garlic make a wonderful dish that can be on your table in about 30 minutes.
Ingredients
- 2 c. cooked white rice, chilled
- 2 chicken breasts, diced
- 2 cloves garlic, minced
- 1 c. mixed vegetables (like peas, carrots, and corn)
- 2 eggs, beaten
- 2 T. soy sauce
- 1 T. sesame oil
- salt and pepper, to taste
- green onions, for garnish
Steps
- In a large skillet or wok, heat some oil over medium-high heat. Add diced chicken and garlic; cook until chicken is cooked through and garlic is fragrant.
- Push the chicken to one side of the skillet. Add the beaten eggs to the other side; scramble the eggs until fully cooked.
- Add mixed vegetables to the skillet; cook until tender.
