Cooked, chilled white rice, chicken breasts, mixed veggies, eggs, and garlic make a wonderful dish that can be on your table in about 30 minutes.
2 c. cooked white rice, chilled
2 chicken breasts, diced
2 cloves garlic, minced
1 c. mixed vegetables (like peas, carrots, and corn)
2 eggs, beaten
2 T. soy sauce
1 T. sesame oil
salt and pepper, to taste
green onions, for garnish
In a large skillet or wok, heat some oil over medium-high heat. Add diced chicken and garlic; cook until chicken is cooked through and garlic is fragrant.
Push the chicken to one side of the skillet. Add the beaten eggs to the other side; scramble the eggs until fully cooked.
Add mixed vegetables to the skillet; cook until tender.
Add the chilled rice to the skillet; stir-fry everything, breaking up any clumps of rice.
Pour soy sauce and sesame oil over the mixture; stir-fry until everything is evenly coated. Season to taste with salt and pepper.
Serve, garnished with chopped green onions, if desired.
