Description

This is a simple to prepare breakfast to make for family or for company. It's delicious, satisfying and easy to add your own favorite ingredients, like bacon, sausage patties, or ham steaks, to name a few.

Ingredients

4 English muffins, split
4 slices American cheese, or your favorite
2 T. unsalted butter
8 large eggs, beaten
Kosher salt and black pepper
1 ripe Hass avocado, peeled and cut into thin slices
chopped scallions, for optional garnish

Preheat the oven to 375 degrees F.

Place the English muffins halves, split side up, on a rimmed baking sheet.

Top each bottom half with 1 slice of cheese. Bake until the cheese melts, 2 to 3 minutes.

Meanwhile, in a large non-stick skillet, melt the butter. Add the eggs; cook over low heat, stirring, until curds begin to form, about 2 minutes. Season with salt and pepper. Cook until the eggs are just set, about 2 more minutes.

Spoon the scrambled eggs over the melted cheese; top with the avocado slices.

Garnish with scallions, if desired. Add the muffin tops.

Serve.
