Make a fantastic main dish with store bought cheese ravioli, fresh veggies, seasonings and a little grated cheese. You'll be surprised at how easy and delicious it is.
20 oz. package refrigerated cheese ravioli
1 T. olive oil
1 lb. asparagus, ends trimmed, cut into 2" pieces
2 c. cherry or grape tomatoes, halved
3 cloves garlic, minced
salt and black pepper, to taste
1/4 c. chicken broth
1 T. lemon juice
1/4 c. fresh basil, chopped
1/4 c. fresh parsley, chopped
1/4 c. grated Parmesan cheese, plus more for serving
Cook the ravioli according to the package instructions, about 7 minutes; drain; set aside.
While the ravioli is cooking, heat the olive oil in a large skillet over medium-high heat. Add the asparagus; cook for 4-5 minutes until tender-crisp.
Add the tomatoes and garlic to the skillet; season with salt and pepper; cook another 2-3 minutes until the tomatoes begin to soften. Pour in the broth and lemon juice; bring to a simmer; cook for 2 minutes.
Add the cooked and drained ravioli to the skillet; gently toss to combine with the vegetables and sauce.
Stir in the fresh basil, parsley, and grated Parmesan cheese; cook 1-2 minutes until everything is heated through.
Serve immediately, topped with more Parmesan cheese, if desired.
