Mushroom Ravioli with Spinach

Description

Take packaged ravioli to new heights with a few more ingredients like fresh mushrooms, spinach and Parmesan cheese. It's ready in less than 30 minutes.

Ingredients

9 oz. package mushroom ravioli
1 T. olive oil
1 c. fresh mushrooms, chopped
2 c. fresh spinach
1/2 c. heavy cream
1/2 c. vegetable (or chicken) broth
1/2 t. salt
1/4 t. black pepper
1/4 c. Parmesan cheese, grated

Boil ravioli according to package instructions; drain; set aside.

Heat olive oil in a large skillet over medium heat; add mushrooms, salt, and pepper; cook until mushrooms are soft. Stir in spinach; cook until wilted.

Pour in chicken broth and heavy cream; stir; bring to a simmer. Add cooked ravioli; toss gently to coat in sauce.

Serve hot, sprinkled with Parmesan cheese on the top.

2-3 servings.
