These little gems are tasty, easy to make and versatile. Serve them as an appetizer, with pasta or on a sub sandwich.
1 lb. ground beef
1/2 c. bread crumbs
1/4 c. milk
1 egg, beaten
1/2 c. onion, finely chopped
2 cloves garlic, minced
1 t. salt
1/2 t. black pepper
1/2 t. smoked paprika
8 small Cheddar cheese cubes (or your favorite)
1/2 c. ketchup
2 T. brown sugar
1 T. Worcestershire sauce
Preheat oven to 375 degrees F. Grease a baking sheet.
In a big bowl, mix the ground beef, bread crumbs, milk, beaten egg, onion, garlic, salt, black pepper, and smoked paprika together until well combined.
Divided the meat mixture into 8 equal parts; flatten each one a bit; place a cheese cube in the middle; wrap the meat around the cheese, making little meatballs.
Place meatloaf bites on the prepared baking sheet.
In a small bowl, mix the ketchup, brown sugar, and Worcestershire sauce together until well combined; drizzle over the meatloaf bites.
Place the baking sheet in the oven; bake about 25-30 minutes, or until cooked through.
Immediately serve while still hot.
