Elegant Seafood Lasagna

Description

This elegant lasagna is a seafood lovers delight, with lots of shrimp, bay scallops and crab meat. It's the perfect dish to serve when entertaining.

Ingredients

9 cooked lasagna noodles
1 lb. shrimp (shelled, deveined and cut into small pieces)
1 lb. bay scallops
1 lb. can crab meat, drained
1/2 c. scallions, green tops only, chopped
6 T. flour
1/3 rounded c. grated Parmesan cheese
2 c. shredded Mozzarella cheese
2 c. whole milk
1/2 - 1 c. chicken broth
6 T. butter
8 oz. bottle clam juice
1 T. olive oil
1 large garlic clove
1/2 t. salt
1/4 t. pepper

Preheat oven to 350 degrees F.

Bring a large pot of water to a boil. Cook pasta according to package directions; drain; set aside.

While pasta is cooking, make the sauce. Add oil to a preheated medium saucepan on medium heat. Sauté shrimp, scallops, scallions, garlic, and a pinch each of salt and pepper. Cook until shrimp is pink and scallops are opaque. Drain, reserving any liquid. Transfer seafood to a large bowl. Stir in crab; set aside.

Add enough chicken broth to the reserved cooking liquid to equal 1 c. If there is no reserved liquid, use 1 c. chicken broth; set aside.

Reduce heat to medium-low; melt butter; whisk in flour until smooth and creamy. Increase heat to medium to medium-high. Add clam juice, chicken broth mixture, 1/2 t. salt and 1/4 t. pepper, whisking until smooth. Slowly add in milk, whisking until thick and bubbly. Remove from heat. Stir in Parmesan cheese; season to taste.

Prepare a baking dish with cooking spray. Spread a thin layer of sauce on the bottom of the dish. Add 3 lasagna noodles. Add 1/3 of the Mozzarella, 1/3 of the seafood mixture, and 1/3 of the remaining sauce.

Repeat the layers, starting with the noodles. For the last layer, top with pasta, seafood mixture, sauce, and mozzarella.

Loosely cover dish with aluminum foil. Bake 25 minutes. Remove foil; bake 10-15 minutes.

Turn oven to broil. Move the lasagna to the top shelf. Broil until golden brown patches develop, about 1 - 2 minutes.
