This classic sandwich will make your mouth water. It has all of the expected ingredients like corned beef, sauerkraut and Swiss cheese with Thousand Island Dressing, all on buttered dark rye bread.
4 slices dark rye bread
1 c. shredded or sliced Swiss cheese
4 T. Thousand Island dressing
1 c. sauerkraut, well drained
1/2 lb. corned beef (or pastrami, thinly sliced)
4 T. butter, unsalted, softened
Lay out 2 bread slices on a platter; top each with Swiss cheese; drizzle Thousand Island dressing on each slice; add half of the corned beef and then half of the sauerkraut to each slice. Place a slice of bread on the top of each.
Spread butter on the outside of each bottom slice.
Heat a large skillet over medium heat. Place both sandwiches with the buttered bread slices down in the skillet; cook until golden, about 3 minutes.
Spread the remaining butter on the outside of the top slices of bread; flip the sandwiches over; cook for another 2 - 3 minutes or until golden.
Serve immediately.
