In under 30 minutes, you can have this simple dish on the table ready to eat. The thin pasta along with tomatoes, crispy bacon and onion make a perfect meal anytime but especially when time is short.
5 oz. capellini pasta
8 oz. thick-cut bacon (or turkey bacon)
3 medium tomatoes, diced
1 small onion, finely diced
3 garlic cloves, minced
2 T. fresh basil, thinly sliced
1/4 t. freshly ground black pepper
1/2 t. kosher salt
2 oz. grated Parmesan cheese
In a large skillet, cook the bacon until crispy; remove from the skillet; discard all but 2 T. of the grease.
While the bacon is cooking, cook the pasta according to the package directions; drain; set aside.
Sauté the onion and garlic in the bacon grease in the same skillet until tender. Add the tomatoes, basil, salt, and pepper; cook until slightly softened and bubbly; stir in the bacon.
Toss the cooked capellini in the skillet with the tomato mixture.
Serve with grated Parmesan cheese, if desired.
