Copycat Longhorn Parmesan Crusted Chicken

Description

Why go to a restaurant for your favorite chicken when you can easily make it at home? It's just as tasty and so economical, you'll make it often.

Ingredients

Main Dish:
4 boneless, skinless chicken breasts
salt and pepper
3 T. vegetable oil

Marinade:
Marinade Magic or a bottle of Italian salad dressing
1/3 c. olive oil
1/3 c. creamy Ranch dressing
2 T. Worcestershire sauce
1 t. distilled white vinegar
1 t. freshly squeezed lemon juice
1 T. minced garlic
1/2 t. freshly ground black pepper

Parmesan Crust:
1/2 c. Parmesan cheese, finely chopped
1/2 c. Provolone cheese, finely chopped
6 T. Buttermilk Ranch or Classic Ranch salad dressing
4 T. melted butter
3/4 c. panko bread crumbs
2 t. garlic powder

Marinating:
Whisk all marinade ingredients together until it's smooth and well-blended.

Place chicken in a gallon freezer bag, expel the air, and seal it securely. Use a meat tenderizer to gently pound the chicken until about 1/2 inch in thickness.

Season both sides of the chicken with salt and pepper.

Transfer chicken to another freezer bag, pour in the marinade, seal, and refrigerate, letting the flavors meld for at least 30 minutes or, overnight.

Searing the Chicken:
In a skillet, preferably cast iron for the best sear, heat 2-3 T. vegetable oil over medium-high heat.
Add the chicken; let it sizzle untouched for 4-5 minutes per side. If the skillet gets too hot, turn the heat down a bit. Once it’s perfectly seared, nestle the chicken onto a fbaking sheet; cover with aluminum foil to keep warm.

Parmesan Crust:
Set oven to low broil, reaching about 450° F.

In a bowl, blend the Parmesan, Provolone, and Ranch dressing together. Microwave in 15-second bursts, giving a gentle stir between each interval, until it achieves a molten state. Lavishly layer this on the chicken.

Broil for 3 minutes or until the cheese starts to turn golden.

Meanwhile, combine the melted butter, garlic powder, and bread crumbs; top chicken with this mixture.

Broil for just about 1 minute until the breadcrumbs achieve a golden tint, keeping a close eye on it.

Serve.
