Change up your typical cheeseburgers and use egg roll wrappers instead of buns. The wraps include all of the usuals, ground beef, cheese, pickle relish, and onions.
1 lb. ground beef
1 t. salt
1/2 t. black pepper
1/2 c. onion, finely diced
1 c. Cheddar cheese, shredded
1/4 c. pickle relish
1/2 c. Thousand Island Dressing
10 egg roll wrappers
vegetable oil, for frying
Thousand Island Dressing, onion, shredded lettuce, for serving
In a skillet over medium heat, cook the ground beef with salt and pepper until browned. Discard excess fat; add onions, cook until soft.
Remove from heat. Stir in Cheddar cheese, pickle relish, and Thousand Island Dressing until well combined.
Place an egg roll wrapper on a clean surface. Spoon 2 T. beef mixture onto the center of each wrapper; fold the bottom corner over the filling; fold in the sides; roll tightly. Wet the top corner with water to seal the egg roll.
Heat oil in a deep fryer or a large pot to 375 degrees F. Fry the egg rolls in batches until golden brown, about 2-3 minutes. Drain on a paper towel lined platter.
Serve hot with additional Thousand Island Dressing, onion, and lettuce, if desired.
