This easy to make dish is ready in less than 30 minutes and will delight your whole family. It's made with fresh ingredients like refrigerated cheese ravioli, asparagus, tomatoes, basil and parsley.
1 T. olive oil
1 lb. fresh asparagus, ends trimmed, cut into 2" pieces
2 c. cherry or grape tomatoes, halved
3 cloves garlic, minced
salt and black pepper, to taste
1/4 c. chicken broth
1 T. lemon juice
1/4 c. fresh basil, chopped
1/4 c. fresh parsley, chopped
1/4 c. grated Parmesan cheese, plus more for serving
20 oz. package refrigerated cheese ravioli
Cook ravioli according to the package instructions; drain; set aside.
In a large skillet, heat the olive oil over medium-high heat; add the asparagus; cook for 4-5 minutes until tender-crisp.
Add the tomatoes and garlic; season with salt and pepper; cook 2-3 minutes until the tomatoes begin to soften.
Pour in the chicken broth and lemon juice; bring to a simmer; cook for 2 minutes.
Add the ravioli to the skillet; gently toss to combine.
Stir in the basil, parsley, and Parmesan cheese; cook for another 1-2 minutes until everything is heated through.
Serve hot, topped with additional Parmesan cheese, if desired.
