Mug Baked Rigatoni for One

Description

This baked rigatoni is the perfect dish for college students or single people. It's what to make when time is short but a great meal is needed.

Ingredients

6 T. favorite marinara sauce, divided
shredded Mozzarella cheese, to taste
2 t. chopped fresh basil
1 serving cooked rigatoni pasta
grated Parmesan cheese, to taste

Preheat the oven to 400 degrees F.

Cook the rigatoni according to package directions.

Add 2 T. marinara sauce in the bottom of a large, oven-safe mug. Top with a sprinkle of Mozzarella cheese, basil, and another 2 T. marinara sauce.

Arrange the already cooked rigatoni vertically in concentric circles on top of the sauce; top with the remaining 2 T. marinara sauce and a sprinkle of Mozzarella and Parmesan cheeses.

Bake 20 minutes or until the cheese has melted, or microwave for 3-4 minutes.

Serve in the mug or transfer the pasta to a bowl.
